Whipped Feta Dip with Hot Honey and Crushed Pistachios
An effortless 15-minute appetizer that looks and tastes like a dish from a fine Mediterranean bistro. Tangy block feta is transformed in the food processor into an airy, cloud-like dip.
Ingredients
- 8 oz Greek feta cheese (in brine), drained and crumbled
- 1/2 cup Greek whole milk yogurt
- 3 tbsp extra virgin olive oil (divided)
- 1 tbsp freshly squeezed lemon juice
- 1 small clove garlic, grated
- 2 tbsp hot chili honey (or wildflower honey with a pinch of red pepper flakes)
- 1/4 cup roasted unsalted pistachios, coarsely chopped
- 1 tbsp fresh mint or dill leaves, roughly chopped
- Flaky sea salt and fresh black pepper
- Pita wedges or sourdough crostini for serving
Directions
Whip the feta and yogurt
In the bowl of a food processor, combine crumbled feta, Greek yogurt, 2 tablespoons olive oil, lemon juice, and grated garlic.
Process until velvety smooth
Process for 3 to 4 minutes on high speed, scraping down the sides with a spatula halfway through, until the mixture is silky, light, and spreadable.
Plate and garnish
Spoon the whipped feta into a shallow serving bowl and use the back of a spoon to create rustic swoops. Drizzle hot honey and remaining olive oil over the top.
Top and serve
Scatter chopped pistachios, fresh mint, and a sprinkle of flaky sea salt over the swirls. Serve immediately at room temperature.
