Ingredients

  • 3 cups sweet corn kernels (fresh or frozen, thawed)
  • 1 tbsp neutral oil or olive oil
  • 1 can (15 oz) black beans, rinsed and thoroughly drained
  • 1 cup diced roma tomatoes, seeds removed
  • 1/2 cup finely diced red onion
  • 1 fresh jalapeΓ±o pepper, seeded and finely minced
  • 1/3 cup fresh cilantro leaves, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 3/4 tsp kosher salt & freshly cracked pepper
  • Crisp tortilla chips for dipping

Directions

Char the corn

Heat oil in a heavy cast-iron skillet over high heat. Add corn in an even layer and cook undisturbed for 3–4 minutes until charred on the bottom. Stir and cook 2–3 minutes more until blistered.

Cool slightly

Transfer charred corn to a wide mixing bowl and let cool for 5 minutes so it does not wilt the fresh herbs.

Combine all ingredients

Add the black beans, diced tomatoes, red onion, jalapeΓ±o, cilantro, lime juice, ground cumin, smoked paprika, and salt.

Toss and chill

Toss thoroughly to coat. Taste and adjust seasoning with extra lime or salt. Serve chilled or at room temperature.
