Ingredients

  • 8 oz cream cheese, softened at room temperature
  • 1/2 cup sour cream or whole milk Greek yogurt
  • 1/4 cup mayonnaise
  • 2 cloves garlic, finely minced
  • 10 oz frozen chopped spinach, thawed and squeezed very dry
  • 14 oz can quartered artichoke hearts, drained and chopped
  • 1 1/2 cups shredded low-moisture mozzarella cheese (divided)
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp kosher salt & 1/4 tsp black pepper
  • Warm tortilla chips or toasted baguette slices for dipping

Preheat and prepare dish

Preheat oven to 375Β°F (190Β°C). Lightly grease a 9-inch cast iron skillet or oven-safe baking dish.

Blend the creamy base

In a large mixing bowl, beat together the softened cream cheese, sour cream, mayonnaise, minced garlic, salt, pepper, and red pepper flakes until smooth and lump-free.

Fold in greens and cheese

Fold in the thoroughly dried spinach, chopped artichoke hearts, 1 cup of mozzarella, and half the grated parmesan until evenly distributed.

Bake until bubbling

Spread the mixture into the prepared skillet. Top with remaining mozzarella and parmesan. Bake for 20 minutes until bubbling around the edges and lightly golden on top.
