The perfect marriage of two classics: cold spiral rotini pasta capturing thick garlic Caesar dressing, tossed with cold crunchy romaine hearts, shaved Parmesan, and garlic croutons. Difficulty: Easy.
Ingredients
- 8 oz rotini or cavatappi pasta
- 1/2 cup quality creamy Caesar dressing & 1 tbsp lemon juice
- 3 cups chopped crisp romaine lettuce hearts
- 1/2 cup shaved Parmigiano-Reggiano cheese
- 1 cup garlic herb croutons & freshly cracked black pepper
Directions
Cook and rinse pasta
Cook pasta in salted water 9 mins until al dente. Drain and rinse thoroughly with cold water to stop cooking.
Toss pasta with Caesar dressing
In a large bowl, toss cold pasta with Caesar dressing and lemon juice.
Fold in romaine and parmesan
Add chopped romaine, shaved parmesan, and croutons. Toss gently and serve.
