Ingredients
- 2 cans (5 oz each) solid light tuna in olive oil, drained slightly
- 1/4 cup pitted Kalamata olives, halved
- 1/4 cup diced English cucumber & 2 tbsp finely diced red onion
- 2 tbsp sliced pepperoncini or banana peppers
- 1 tbsp red wine vinegar & 1 tbsp extra virgin olive oil
- 1/2 tsp dried oregano & fresh cracked black pepper
- Butterhead or bibb lettuce leaves for serving
Directions
Combine vegetables and aromatics
In a bowl, combine diced cucumber, red onion, olives, pepperoncini, vinegar, olive oil, and oregano.
Flake in tuna
Add tuna in large tender flakes. Gently toss to coat without mashing.
