The No-Cook White Bean and Salmon Salad That Keeps Me Full for Hours
A healthy, no-cook dinner packed with omega-3s and fiber. Flaked wild salmon tossed with creamy cannellini beans, fresh parsley, capers, and a bright lemon Dijon vinaigrette.
Ingredients
- 1 can (6 oz) boneless wild pink or red salmon, drained
- 1 can (15 oz) cannellini beans, rinsed and drained
- 2 cups baby arugula or fresh salad greens
- 2 tbsp olive oil & juice of 1 lemon & 1 tsp Dijon mustard
- 1 tbsp capers & 2 tbsp chopped fresh parsley
Directions
Whisk vinaigrette
Whisk olive oil, lemon juice, mustard, salt, and pepper in a serving bowl.
Toss and serve
Add white beans, flaked salmon, capers, and greens. Toss gently to coat without breaking up salmon too much.
