Ingredients
- 3 cups cooked shredded chicken breast (rotisserie works great)
- 1/3 cup mayonnaise & 1/3 cup plain Greek yogurt
- 2 tbsp sweet mango chutney or apricot preserves
- 1 tbsp mild yellow curry powder & 1 tsp lemon juice
- 1/4 cup golden raisins (sultanas) & 1/4 cup toasted sliced almonds
- Salt and black pepper to taste
Directions
Whisk curry dressing
In a mixing bowl, stir mayonnaise, Greek yogurt, mango chutney, curry powder, and lemon juice until velvety.
Toss chicken and mix-ins
Fold shredded chicken and golden raisins into dressing. Season to taste with salt and pepper.
Garnish with almonds
