Shirred eggs (also called baked eggs) look and taste like luxury from a Parisian cafe, but require only 5 minutes of prep. Eggs baked gently in individual ramekins with heavy cream, butter, and cheese until whites set and yolks stay rich and runny. Difficulty: Easy.
Ingredients
- 4 large fresh eggs
- 4 tbsp heavy whipping cream (1 tbsp per egg)
- 1/2 cup shredded Gruyère or fontina cheese
- 1 tbsp butter for greasing ramekins
- Fresh chopped chives & crusty toast for dipping
Directions
Butter ramekins
Butter two 6-oz ramekins. Spoon 1 tbsp cream into bottom of each ramekin.
Crack eggs and top
Carefully crack 2 eggs into each ramekin. Spoon remaining cream over whites. Season with salt, pepper, and cheese.
Bake until whites are set
Bake at 375Β°F (190Β°C) for 12β15 minutes until whites are just set and yolks remain soft and jiggling.
