Ingredients

  • 3 medium very ripe bananas, well mashed (about 1 1/4 cups)
  • 1/2 cup canned pure pumpkin puree
  • 1/3 cup melted unsalted butter
  • 3/4 cup granulated sugar or brown sugar
  • 1 large egg, beaten & 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour & 1 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice & 1/2 tsp kosher salt

Mash and mix wet ingredients

In a large bowl, mash bananas. Whisk in pumpkin puree, melted butter, sugar, egg, and vanilla.

Fold dry ingredients

Sprinkle flour, baking soda, pumpkin pie spice, and salt over wet mixture. Fold gently with a spatula just until flour streaks disappear.

Bake until golden

Pour into a buttered 8x4-inch loaf pan. Bake at 350Β°F (175Β°C) for 55–60 minutes until a toothpick inserted in center comes out clean.
