Uova in Purgatorio is the Italian cousin to Shakshuka: fresh eggs cracked into simmering spicy tomato sauce until whites set and yolks remain golden and jammy, ready to dip with crusty bread. Difficulty: Easy.
Ingredients
- 1 jar (24 oz) quality marinara sauce
- 4 large eggs
- 2 cloves garlic, minced & 1/2 tsp crushed red pepper flakes
- 1/2 cup grated Parmesan or Pecorino cheese
- Fresh basil leaves & crusty bread for serving
Directions
Simmer sauce in skillet
Sizzle garlic and chili flakes in olive oil in a skillet. Pour in marinara and bring to a simmer.
Poach eggs
Make 4 wells in the sauce. Crack an egg into each well. Cover with lid and cook on low for 6β8 minutes until whites set.
Cheese and basil
Uncover, scatter parmesan and fresh basil over top, and serve immediately with crusty bread.
