Skip the messy grater completely. A box of spice cake mix combined with pure carrot puree (or baby food carrots) and eggs bakes into an intensely moist, fragrant carrot cake with zero prep mess. Difficulty: Super Easy.
Ingredients
- 1 box (15.25 oz) spice cake mix
- 2 jars (4 oz each) pure carrot puree (or 1 cup canned carrot puree)
- 3 large eggs
- Cream cheese frosting for topping (optional)
Directions
Mix 3 ingredients
In a bowl, beat spice cake mix, carrot puree, and eggs for 2 minutes until smooth.
Bake until springy
Pour into greased 9x13 pan. Bake at 350Β°F (175Β°C) for 28β30 minutes until a tester comes out clean.
