Ingredients
- 1 1/2 lbs mixed cherry or heirloom tomatoes, halved
- 1 small shallot, finely minced
- 3 tbsp extra virgin olive oil & 1 tbsp white balsamic or red wine vinegar
- 1/2 cup fresh basil leaves, torn
- Flaky sea salt (like Maldon) and freshly ground black pepper
Directions
Marinate shallots in vinegar
In a salad bowl, let minced shallot sit in vinegar and a pinch of salt for 5 minutes to soften its bite.
Add tomatoes and oil
Whisk in olive oil. Add halved tomatoes and gently toss to coat in dressing.
Finish with basil
Torn fresh basil leaves over the bowl right before serving with warm crusty baguette.
