Ingredients

  • 1 whole wheat or sourdough English muffin, split and toasted
  • 1 large fresh egg
  • 1 cup fresh baby spinach
  • 1 slice sharp cheddar or American cheese
  • 1 tsp butter for skillet & salt and pepper

Directions

Fry egg and wilt spinach

Melt butter in small skillet. Fry egg to desired doneness; push to one side and wilt spinach in remaining butter for 60 seconds.

Melt cheese and assemble

Place cheese over hot egg in skillet to melt. Stack spinach, cheesy egg, and top muffin.
