Spinach and Goat Cheese Quiche with Sweet Potato Crust
Thinly sliced sweet potatoes pressed into a pie plate form a crisp, naturally sweet crust that replaces heavy pastry dough. Filled with silken baked eggs, wilted spinach, and tangy chèvre goat cheese. Difficulty: Moderate.
Ingredients
- 2 medium sweet potatoes, sliced paper-thin with a mandoline
- 1 tbsp olive oil for brushing
- 6 large eggs & 1/2 cup whole milk
- 3 cups fresh baby spinach, sautΓ©ed and squeezed dry
- 4 oz crumbled fresh goat cheese (chèvre)
- 1/4 tsp ground nutmeg, salt and black pepper
Directions
Bake sweet potato crust
Overlap sweet potato rounds along bottom and sides of a 9-inch pie dish. Brush with oil; bake at 375Β°F for 15 mins to set.
Fill and bake quiche
Whisk eggs, milk, nutmeg, salt, and pepper. Scatter cooked spinach and goat cheese in crust; pour in egg custard. Bake 30β35 mins until puffed and golden.
