Ingredients

  • 1 lb sweet mini peppers (about 12–14 peppers), halved lengthwise and seeded
  • 6 oz creamy goat cheese (chΓ¨vre), softened
  • 2 oz cream cheese or ricotta
  • 1/4 cup kalamata olives, finely chopped
  • 3 tbsp oil-packed sun-dried tomatoes, drained and chopped
  • 1 tbsp fresh oregano or basil, minced
  • 1 clove garlic, minced
  • 1 tbsp extra virgin olive oil for drizzling
  • Fresh ground black pepper & flaky salt

Preheat oven to 375Β°F (190Β°C). Line a large baking sheet with parchment paper.

In a bowl, mash together goat cheese, cream cheese, kalamata olives, sun-dried tomatoes, oregano, garlic, and freshly cracked black pepper.

Stuff the peppers

Spoon the filling evenly into each pepper half. Arrange on the baking sheet and drizzle lightly with olive oil.

Bake for 15 minutes until peppers are tender-crisp and cheese is warm and lightly golden on top. Finish with flaky salt.
