Spain's beloved Bizcocho de Naranja: whole milk yogurt, fruity extra virgin olive oil, and the grated zest and juice of Valencia oranges baked into an aromatic, golden loaf that stays moist for days. Difficulty: Easy.
Ingredients
- 1 cup plain whole milk yogurt & 3 large eggs
- 1 cup granulated sugar & 1/2 cup fruity extra virgin olive oil
- Zest and juice of 2 fresh Valencia oranges
- 2 cups all-purpose flour & 2 tsp baking powder & 1/2 tsp salt
Directions
Rub orange zest into sugar
Rub orange zest into sugar with your fingers until fragrant and orange-tinted. Whisk in eggs, yogurt, olive oil, and orange juice.
Fold dry ingredients
Fold in flour, baking powder, and salt until just combined.
Bake until golden
Pour into greased loaf pan or 9-inch square. Bake at 350Β°F (175Β°C) for 38β42 minutes. Cool and dust with powdered sugar.
