Known as the 'PΓ’tΓ© of the South': freshly grated sharp cheddar cheese blended with creamy mayonnaise and sweet diced red pimento peppers. Smeared thick between two slices of squishy white bread. Difficulty: Super Easy.
Ingredients
- 8 oz sharp cheddar cheese, freshly grated (never pre-shredded)
- 1/2 cup Duke's mayonnaise
- 1 jar (4 oz) diced pimento peppers, drained thoroughly
- 8 slices soft white bread (like Sunbeam or Potato bread)
- Pinch of cayenne pepper (optional)
Directions
Mix pimento spread
In a bowl, mix freshly grated cheddar, mayonnaise, drained pimentos, and cayenne with a fork until blended.
Spread generously on bread
Spread a thick layer of pimento cheese edge-to-edge on 4 bread slices.
Assemble and slice
Top with remaining bread slices. Cut diagonally into triangles and serve with potato chips.
