Crispy Sheet Pan Sweet Potato & Bacon Breakfast Hash
A complete hearty skillet-style hash made entirely on one baking sheet. Sweet potato cubes roast in bacon drippings with smoked paprika, then eggs are cracked directly onto the pan and baked until just set. Difficulty: Easy.
Ingredients
- 2 large sweet potatoes, peeled and diced into 1/2-inch cubes
- 6 strips thick bacon, cut into 1-inch pieces
- 1 medium red onion, diced
- 4 large eggs
- 1 tsp smoked paprika, 1/2 tsp garlic powder, salt and pepper
- Fresh chopped parsley and hot sauce for serving
Directions
Roast potatoes and bacon
Toss sweet potatoes, onion, and bacon with paprika, salt, and pepper on sheet pan. Roast at 400Β°F (200Β°C) for 25 mins until potatoes are tender and browned.
Bake eggs
Make 4 wells in the hash. Crack an egg into each well. Return to oven for 6β8 minutes until egg whites set and yolks are runny.
