Hot Milk Cake Is the Easy Retro Dessert You Need To Try

A beloved mid-century staple: beating eggs and sugar into thick ribbons, then whisking in scalding hot milk and melted butter. The heat cooks the flour starch instantly, resulting in an exceptionally tender, fine-grained sponge. Difficulty: Easy.

Ingredients

  • 4 large eggs, room temperature
  • 2 cups granulated sugar & 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour & 2 1/4 tsp baking powder
  • 1 1/4 cups whole milk & 10 tbsp (1 1/4 sticks) unsalted butter

Directions

1

Beat eggs and sugar

Beat eggs and sugar on high speed for 5 minutes until pale, thick, and tripled in volume. Stir in flour and baking powder.

2

Heat milk and butter

Heat milk and butter in a saucepan until butter is completely melted and milk is steaming hot.

3

Whisk hot milk into batter and bake

Slowly pour hot milk mixture into batter while whisking gently. Pour into greased 9x13 pan. Bake at 350Β°F (175Β°C) for 30–35 minutes.

πŸ’‘ CHEF'S PRO TIPS

  • Beat the eggs and sugar for a full 5 minutes until ribbon stageβ€”this traps the air that gives the cake its cloud-like rise.

This has completely replaced my normal avocado toast! The beans blend so well you cannot even tell, and I stay full until lunchtime!

Great trick for adding protein without cooking eggs on busy mornings. Added a pinch of red pepper flakes and lemon zestβ€”delicious.
