Ingredients

  • 1 ripe cantaloupe, seeded and scooped into balls (about 24 balls)
  • 4 oz thinly sliced prosciutto di Parma, cut into strips
  • 8 oz small fresh mozzarella pearls (bocconcini)
  • 24 fresh small basil leaves
  • 2 tbsp aged thick balsamic glaze
  • 24 wooden cocktail skewers or decorative toothpicks
  • Flaky sea salt and fresh black pepper

Directions

1

Prep melon and prosciutto

Use a melon baller to scoop 24 round melon balls. Cut each slice of prosciutto lengthwise into 2–3 thin ribbons.

2

Assemble skewers

Thread one end of a prosciutto ribbon onto a skewer, fold over a mozzarella pearl, thread through prosciutto, add a fresh basil leaf, and finish with a cantaloupe ball.

3

Plate and drizzle

Arrange skewers on a wide platter. Right before serving, drizzle artistic zig-zags of thick balsamic glaze over the top.

4

Season and serve

Finish with a delicate sprinkle of flaky sea salt and cracked black pepper. Serve immediately.

πŸ’‘ CHEF'S PRO TIPS

  • Choose a cantaloupe that feels heavy for its size and smells fragrant at the stem end for maximum sweetness.
  • Keep skewers chilled on the platter until 10 minutes before guests arrive.

This has completely replaced my normal avocado toast! The beans blend so well you cannot even tell, and I stay full until lunchtime!

Great trick for adding protein without cooking eggs on busy mornings. Added a pinch of red pepper flakes and lemon zestβ€”delicious.
