A cheerful pick-me-up cake made in one bowl: fresh lemon zest rubbed into sugar, stirred with yogurt, butter, and eggs, and baked into an 8x8 snacking cake drenched in tart lemon glaze. Difficulty: Easy.
Ingredients
- Zest and juice of 2 fresh lemons & 1 cup granulated sugar
- 1/2 cup melted butter & 2 large eggs & 1/2 cup Greek yogurt
- 1 1/2 cups flour & 1 1/2 tsp baking powder & 1/2 tsp salt
- Glaze: 1 cup powdered sugar whisked with 2 tbsp fresh lemon juice
Directions
Whisk lemon batter
Rub lemon zest into sugar. Whisk in melted butter, eggs, yogurt, and 2 tbsp lemon juice. Fold in flour and baking powder.
Bake snack cake
Bake in 8x8 pan at 350Β°F (175Β°C) for 30β35 minutes until golden.
Pour lemon glaze
Pour lemon glaze over warm cake so it soaks in and forms a crackly crust.
