Ingredients
- 6 large flour tortillas (burrito size)
- 8 large eggs, scrambled soft in butter
- 1/2 lb breakfast sausage or bacon, cooked and crumbled
- 1 can (15 oz) black beans, rinsed and drained
- 1 1/2 cups shredded Pepper Jack or cheddar cheese
- 1/2 cup salsa verde or chunky salsa
Directions
Scramble eggs and cool
Scramble eggs softly. Let eggs and sausage cool to room temperature before assembling to prevent soggy tortillas.
Roll burritos
Layer eggs, sausage, black beans, cheese, and salsa on each tortilla. Fold sides in and roll tightly.
Freeze or sear
Sear seam-side down in a hot skillet for 2 mins, or wrap tightly in foil and freeze.
