The Easy Banana Bread Casserole You Can Make Ahead
Transform day-old banana bread into the ultimate holiday brunch casserole. Cubed banana bread soaked in egg custard and baked under a crunchy brown sugar and pecan streusel. Difficulty: Easy.
Ingredients
- 1 loaf day-old banana bread, cut into 1-inch cubes
- 6 large eggs & 1 1/2 cups whole milk & 1/2 cup heavy cream
- 1 tsp cinnamon & 1 tsp vanilla extract
- 1/3 cup brown sugar & 1/2 cup chopped pecans for streusel topping
- Maple syrup and powdered sugar for serving
Directions
Layer bread and custard
Place cubed banana bread in a 9x13 dish. Whisk eggs, milk, cream, cinnamon, and vanilla; pour over bread.
Streusel top and bake
Scatter brown sugar and pecans over top. Bake at 350Β°F (175Β°C) for 40β45 minutes until golden and custard is set.
