Ingredients

  • 1 cup granulated sugar & 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 6 cups crisp rice cereal (Rice Krispies)
  • 1 cup semi-sweet chocolate chips & 1 cup butterscotch chips, melted together

Directions

1

Dissolve sugar and syrup

In a pot, bring sugar and corn syrup just to a simmer over medium heat (do not boil hard). Remove from heat; stir in peanut butter.

2

Mix cereal and press

Stir in crisp rice cereal until evenly coated. Press into buttered 9x13-inch pan.

3

Melt chips and spread

Melt chocolate and butterscotch chips together. Spread evenly over cereal layer. Let cool 1 hour before slicing.

πŸ’‘ CHEF'S PRO TIPS

  • Don't let the sugar syrup boil too long on the stove, otherwise the bars will turn rock-hard after cooling.

This has completely replaced my normal avocado toast! The beans blend so well you cannot even tell, and I stay full until lunchtime!

Great trick for adding protein without cooking eggs on busy mornings. Added a pinch of red pepper flakes and lemon zestβ€”delicious.
