These No-Bake Lunch Lady Bars Are a Retro Treat
Also beloved in the Midwest as Scotcheroos: crispy rice cereal folded with warm peanut butter and sugar syrup, topped with a thick layer of melted butterscotch and semi-sweet chocolate chips. Difficulty: Super Easy.
Ingredients
- 1 cup granulated sugar & 1 cup light corn syrup
- 1 cup creamy peanut butter
- 6 cups crisp rice cereal (Rice Krispies)
- 1 cup semi-sweet chocolate chips & 1 cup butterscotch chips, melted together
Directions
Dissolve sugar and syrup
In a pot, bring sugar and corn syrup just to a simmer over medium heat (do not boil hard). Remove from heat; stir in peanut butter.
Mix cereal and press
Stir in crisp rice cereal until evenly coated. Press into buttered 9x13-inch pan.
Melt chips and spread
Melt chocolate and butterscotch chips together. Spread evenly over cereal layer. Let cool 1 hour before slicing.
