Fluffy Lemon Ricotta Pancakes with Blueberry Butter

Ingredients
- 1 cup whole milk ricotta cheese
- 2 large eggs, separated
- 3/4 cup whole milk & 2 tbsp melted butter
- Zest and juice of 1 large lemon
- 1 cup all-purpose flour & 1 tbsp sugar & 1 tsp baking powder
- Blueberry jam whipped with 2 tbsp softened butter for topping
Directions
Whip egg whites
In a clean bowl, whip egg whites until stiff peaks form.
Mix ricotta batter
Whisk ricotta, egg yolks, milk, melted butter, lemon zest, and juice. Stir in flour, sugar, and baking powder. Fold in egg whites gently.
Griddle gently
Cook 1/3-cup scoops on buttered griddle over medium-low heat for 3β4 mins per side until puffed and golden.
