It's Not St. Patrick's Day Without Irish Potato Candy
Despite the name, there are no actual potatoes here! A 100-year-old Philadelphia confection made by kneading cream cheese, butter, coconut, and powdered sugar into mini 'potato' shapes, then rolling them in cinnamon to look like freshly dug spuds. Difficulty: Super Easy.
Ingredients
- 4 oz cream cheese, softened & 4 tbsp unsalted butter, softened
- 1 tsp pure vanilla extract & pinch of salt
- 4 cups powdered sugar
- 2 1/2 cups sweetened shredded coconut
- 2 tbsp ground cinnamon for rolling
Directions
Beat cream cheese base
Beat cream cheese and butter until smooth. Beat in vanilla and salt. Gradually beat in powdered sugar, then stir in coconut until a stiff dough forms.
Roll mini potatoes in cinnamon
Shape into 1-inch oblong potato shapes. Roll in shallow bowl of ground cinnamon until evenly coated.
Chill to firm
Refrigerate on parchment paper for 1 hour to set.
