- 1/2 cup raw pecan halves, roughly chopped
- 2 tbsp unsalted butter
- 1/4 cup wildflower honey or pure maple syrup
- 1/2 tsp fresh thyme leaves
- 1/4 tsp ground cinnamon
- Pinch of sea salt
- Sliced Honeycrisp apples, pear slices, and water crackers for dipping
Directions

Preheat oven to 375Β°F (190Β°C). Place the brie wheel into a small cast iron skillet or ceramic baker. Lightly score a crosshatch pattern across the top rind.
Toast the pecans
In a small skillet, melt butter over medium heat. Add chopped pecans, cinnamon, and a pinch of salt. Cook 2β3 minutes until fragrant and toasted.
Bake brie
Bake the brie wheel in the oven for 12β15 minutes until soft and puffed, but before the sides burst.
Top with honey nuts
Spoon the warm toasted pecans over the melted brie. Drizzle generously with honey and scatter fresh thyme over the top. Serve warm immediately.
π‘ CHEF'S PRO TIPS
- Do not cut the entire top rind off before baking; scoring it allows heat in while keeping the cheese contained.
- Serve on a heat-safe trivet with a cheese knife for guests to scoop directly onto crackers.
