Ingredients

  • 1 cup creamy natural peanut butter
  • 2 large ripe bananas, mashed
  • 2 large eggs & 1/3 cup pure maple syrup
  • 1 cup rolled oats & 1/2 cup almond flour
  • 1 tsp baking powder & 1/2 tsp salt
  • 1/3 cup strawberry or raspberry jam

Directions

Blend peanut butter batter

Whisk peanut butter, mashed bananas, eggs, and maple syrup. Stir in oats, almond flour, and baking powder.

Fill and swirl jam

Spoon batter into lined muffin tin. Drop 1 tsp jam in center of each muffin; use a toothpick to swirl.

Bake until set

Bake at 350Β°F (175Β°C) for 20–25 minutes until golden and springy to the touch.
