The One-Bowl, High-Protein PB&J Muffins I Make Every Single Week
Created by a registered dietitian: hearty peanut butter and oat muffins stuffed with strawberry preserves. Packed with 9g protein and 4g fiber per muffin. Difficulty: Easy.
Ingredients
- 1 cup creamy natural peanut butter
- 2 large ripe bananas, mashed
- 2 large eggs & 1/3 cup pure maple syrup
- 1 cup rolled oats & 1/2 cup almond flour
- 1 tsp baking powder & 1/2 tsp salt
- 1/3 cup strawberry or raspberry jam
Directions
Blend peanut butter batter
Whisk peanut butter, mashed bananas, eggs, and maple syrup. Stir in oats, almond flour, and baking powder.
Fill and swirl jam
Spoon batter into lined muffin tin. Drop 1 tsp jam in center of each muffin; use a toothpick to swirl.
Bake until set
Bake at 350Β°F (175Β°C) for 20β25 minutes until golden and springy to the touch.
