Dakos is the jewel of Crete: hard toasted bread softened by the natural juices of sweet grated fresh tomatoes, drizzled with peppery Greek olive oil, and crowned with creamy salty feta and wild dried oregano. Difficulty: Super Easy.
Ingredients
- 2 thick slices toasted sourdough or Greek barley rusks (paximadia)
- 2 large ripe beefsteak tomatoes, coarsely grated (skin discarded)
- 1/2 cup authentic Greek sheep's milk feta cheese, crumbled
- 3 tbsp extra virgin Greek olive oil
- 1 tsp dried Greek oregano & pinch of sea salt
Directions
Grate fresh tomatoes
Cut tomatoes in half and grate flesh on large holes of a box grater directly over a bowl; discard skins. Stir in 1 tbsp olive oil and salt.
Spoon over toasted bread
Spoon grated tomato pulp generously over toasted bread so juices soak into the crust.
Top with feta and oregano
