A comforting heirloom spice cake: fragrant ground cinnamon, ginger, cloves, and allspice folded into a buttermilk sponge, blanketed in old-fashioned boiled penuche caramel brown sugar icing. Difficulty: Easy.
Ingredients
- 2 1/2 cups flour & 1 1/2 cups brown sugar & 2 tsp cinnamon & 1/2 tsp cloves & 1/2 tsp nutmeg
- 1 cup buttermilk & 1/2 cup butter, softened & 3 eggs & 1 tsp baking soda
- Penuche frosting: 1/2 cup butter, 1 cup brown sugar, 1/3 cup milk, 2 cups powdered sugar
Directions
Bake spice cake
Beat butter and brown sugar. Add eggs, buttermilk, flour, and spices. Spread in 9x13 pan. Bake at 350Β°F for 30β35 minutes.
Boil penuche frosting
Melt butter and brown sugar; boil 2 mins. Stir in milk, then beat in powdered sugar until thick. Spread immediately over warm cake.
