Crisp Mini Jumbo Lump Crab Cakes with Lemon Remoulade
Maryland coastal perfection in a two-bite finger food appetizer. Pure jumbo lump crab is bound gently with Dijon, lemon, and crushed saltines, pan-fried in butter to a delicate crisp exterior.
Ingredients
- 1 lb fresh jumbo lump crab meat, picked through for shells
- 1 large egg, beaten
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp Old Bay seasoning
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, finely minced
- 1/2 cup crushed saltine crackers or panko
- 2 tbsp butter and 1 tbsp olive oil for pan-frying
- Quick Remoulade: 1/3 cup mayo, 1 tsp capers, 1 tsp Dijon, 1/2 tsp smoked paprika, 1 tsp lemon juice
Directions
Mix binder
In a medium bowl, whisk together the egg, mayonnaise, Dijon mustard, Old Bay, lemon juice, and parsley until smooth.
Fold crab gently
Add crushed saltines and gently fold in the lump crab meat with a rubber spatula, being careful not to break up the large crab chunks.
Shape mini cakes
Shape mixture into 12 small 2-inch patties. Place on a plate and chill for 15 minutes to firm up.
Pan-fry golden
Heat butter and oil in a large nonstick skillet over medium heat. Fry mini crab cakes for 3β4 minutes per side until deeply golden brown. Serve with remoulade.
