Golden Turmeric Milk Chia Seed Pudding with Coconut
Inspired by Ayurvedic golden milk: chia seeds soaked in warm spiced coconut milk infused with turmeric, ginger, cinnamon, and black pepper. Velvety, cooling, and packed with anti-inflammatory benefits. Difficulty: Super Easy.
Ingredients
- 1/2 cup chia seeds
- 1 1/2 cups light coconut milk or oat milk
- 1 tsp ground turmeric & 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger & tiny pinch black pepper (activates turmeric)
- 2 tbsp pure maple syrup & 2 tbsp toasted coconut flakes for topping
Directions
Whisk golden milk base
Whisk coconut milk, turmeric, cinnamon, ginger, black pepper, and maple syrup until smooth.
Stir in chia seeds and chill
Stir in chia seeds. Let sit 5 mins, stir again to prevent clumps, then refrigerate at least 4 hours until thick like pudding.
