Everything you love about Samoas (Caramel deLites) blown up into a 9-inch party cookie cake: buttery crisp shortbread base layered with homemade chewy coconut caramel and drizzled with dark chocolate stripes. Difficulty: Moderate.
Ingredients
- Shortbread Base: 1/2 cup butter, 1/4 cup sugar, 1 cup flour, 1/2 tsp vanilla
- Topping: 3 cups shredded sweetened coconut (toasted), 11 oz soft caramels melted with 3 tbsp milk
- Drizzle: 6 oz dark chocolate, melted
Directions
Bake shortbread base
Press shortbread dough into a 9-inch tart or springform pan. Bake at 350Β°F for 18β20 minutes until golden.
Toss coconut with melted caramel
Toast coconut in oven for 6 mins. Melt caramels with milk; stir in toasted coconut. Spread over baked shortbread.
Drizzle chocolate stripes
Drizzle melted dark chocolate across the top in signature diagonal stripes. Let set before slicing.
