Ingredients
- 12 oz short curved pasta (like lumache or farfalle)
- 2 cups ripe fresh strawberries, hulled and coarsely pureed
- 1/2 cup heavy whipping cream & 2 tbsp unsalted butter
- Fresh torn mint leaves & freshly cracked black pepper
Directions
Cook pasta al dente
Boil pasta in salted water for 9β10 minutes until al dente; drain, reserving 1/4 cup pasta water.
Simmer strawberry cream sauce
In a wide skillet, melt butter with strawberry puree. Stir in heavy cream; simmer gently for 3 minutes until silky.
Toss pasta and garnish
Add hot pasta to sauce. Toss 1 minute until coated. Garnish with fresh mint and cracked black pepper.
