Rolled oats and Greek yogurt blended into a fluffy batter with zero flour, butter, or refined sugar. Every bite bursts with sweet, juicy blueberries. Difficulty: Easy.
Ingredients
- 2 1/2 cups rolled old-fashioned oats
- 1 cup plain whole milk Greek yogurt
- 2 large eggs & 1/2 cup honey or pure maple syrup
- 1 1/2 tsp baking powder & 1/2 tsp baking soda
- 1 1/4 cups fresh or frozen blueberries
Directions
Blend oat batter
In a blender, blend oats, yogurt, eggs, honey, baking powder, and baking soda until smooth.
Fold in blueberries
Pour batter into a bowl and gently fold in fresh blueberries.
Bake until golden
Divide into lined muffin cups. Bake at 375Β°F (190Β°C) for 20β25 minutes until golden.
