Ingredients
- 3 cups fresh sugar snap peas, strings removed, sliced diagonally
- 1 bunch pink radishes, thinly sliced
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese & 1/4 cup chopped fresh mint
- 3 tbsp extra virgin olive oil & juice of 1 lemon & 1/2 tsp salt
Directions
Slice vegetables diagonally
Slice snap peas and radishes into thin slivers for maximum crunch.
Toss with chickpeas and dressing
In a salad bowl, toss snap peas, radishes, and chickpeas with olive oil, lemon juice, and salt.
Fold in feta and mint
