The Fancy Department Store Salad That Reminds Me of My Mom
A nostalgic homage to legendary department store tea rooms of the 1970s. Sweet cooked Oregon bay shrimp, jammy hard-boiled eggs, ripe avocado, and asparagus spears draped in creamy Thousand Island-style Louie dressing. Difficulty: Easy.
Ingredients
- 1/2 lb cooked bay shrimp or peeled tail-on shrimp, chilled
- 2 hard-boiled eggs, halved & 1 ripe avocado, sliced
- 1 head crisp butterhead lettuce, leaves separated
- 1 cup cherry tomatoes, halved & 8 steamed asparagus spears
- Louie dressing: 1/3 cup mayo, 2 tbsp chili sauce or ketchup, 1 tbsp sweet relish, squeeze lemon juice
Directions
Whisk Louie dressing
Whisk mayonnaise, chili sauce, relish, lemon juice, salt, and pepper until smooth and pink.
Arrange salad plates
Line shallow bowls with butter lettuce. Artfully arrange shrimp, eggs, avocado slices, tomatoes, and asparagus.
Drizzle dressing and serve
Drizzle generous spoonfuls of Louie dressing over top.
