All the magic of a loaded New York bagel transformed into a crunchy lunchtime salad: toasted everything bagel croutons, ribbons of smoked Nova lox, soft boiled eggs, crisp Persian cucumbers, capers, and dill cream dressing. Difficulty: Easy.
Ingredients
- 2 fresh everything bagels, cut into 1-inch cubes
- 2 tbsp olive oil & 1 tsp everything bagel spice blend
- 6 oz cold-smoked salmon or lox, torn into pieces
- 4 medium-boiled eggs, quartered & 2 Persian cucumbers, sliced
- 4 cups mixed baby greens & 2 tbsp capers & pickled red onion
- Dressing: 1/4 cup sour cream, 2 tbsp olive oil, 1 tbsp lemon juice, 1 tbsp chopped fresh dill
Directions
Bake bagel croutons
Toss bagel cubes with olive oil and extra everything spice. Bake at 375Β°F (190Β°C) for 12 minutes until crunchy.
Whisk dill dressing
Whisk sour cream, olive oil, lemon juice, chopped dill, and water to thin.
Toss and serve
In a wide bowl, toss greens, bagel croutons, cucumbers, capers, and dressing. Top with smoked salmon and egg quarters.
