My Easy Strawberry Scones Taste Like Summer
Heavy cream and cold grated butter create ultra-flaky, tender scones that melt in your mouth without any dryness. Packed with sweet strawberries and finished with a pink strawberry icing. Difficulty: Moderate.
Ingredients
- 2 cups all-purpose flour & 1/3 cup sugar & 1 tbsp baking powder
- 1/2 cup (1 stick) unsalted butter, frozen and grated
- 1/2 cup heavy cream & 1 large egg & 1 tsp vanilla
- 1 cup fresh strawberries, chopped small and patted dry
- 1 cup powdered sugar whisked with 2 tbsp mashed strawberry juice for glaze
Directions
Grate butter into flour
Whisk flour, sugar, baking powder, and salt. Grate frozen butter into flour; toss with fingers into pea-sized crumbs.
Fold cream and berries
Whisk heavy cream, egg, and vanilla; stir into flour. Gently fold in chopped strawberries. Form into an 8-inch disk; cut into 8 wedges.
Bake and glaze
Bake on parchment at 400Β°F (200Β°C) for 18β20 minutes until golden. Cool, then drizzle with strawberry glaze.
