Ingredients
- 2 medium zucchini, roughly chopped (about 2 cups pulsed)
- 2 cups all-purpose flour & 1 tsp baking soda & 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon & 1/2 tsp salt
- 2 large eggs & 3/4 cup sugar & 1/2 cup vegetable oil
- 1 tsp vanilla extract & 1/2 cup chopped walnuts (optional)
Directions
Pulse zucchini
Pulse chopped zucchini in food processor until finely minced; do not drain juices.
Stir batter
Whisk eggs, sugar, oil, and vanilla. Fold in flour, cinnamon, baking soda, salt, and minced zucchini.
Bake loaf
Pour into greased 9x5 loaf pan. Bake at 350Β°F (175Β°C) for 55β60 minutes until skewer comes out clean.
