The Easy Carrot Coffee Cake I Make All Spring Long
The morning coffee cake reimagined for spring: moist spiced carrot cake filled with a brown sugar and cinnamon streusel layer, baked under extra crunchy butter crumbs. Difficulty: Easy.
Ingredients
- 2 cups flour & 1 cup brown sugar & 2 tsp cinnamon & 1 tsp ginger
- 2 cups grated fresh carrots & 2 eggs & 1/2 cup oil & 1/2 cup sour cream
- Streusel: 3/4 cup brown sugar, 1/2 cup flour, 1/2 cup chopped pecans, 4 tbsp cold butter
Directions
Make streusel and batter
Rub cold butter into streusel ingredients. In another bowl, mix cake wet ingredients, then fold in flour, spices, and carrots.
Layer in pan
Spread half the batter in an 8x8 pan. Sprinkle half the streusel. Spread remaining batter and top with remaining streusel.
Bake until golden
Bake at 350Β°F (175Β°C) for 40β45 minutes until toothpick inserted in center comes clean.
