Literally dump all ingredients into the slow cooker in the morning, and return to a fragrant, Mexican restaurant-quality chicken tortilla soup ready to ladle into bowls with lime and avocado. Difficulty: Super Easy.
Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 1 can (28 oz) crushed fire-roasted tomatoes & 4 cups chicken broth
- 1 can (15 oz) black beans & 1 cup frozen sweet corn
- 1 packet taco seasoning or 1 tbsp chili powder + 1 tsp cumin
- Tortilla chips, diced avocado, lime wedges, and sour cream for serving
Directions
Place in slow cooker
Add chicken breasts, tomatoes, broth, black beans, corn, and spices to slow cooker.
Slow cook and shred
Cover and cook on LOW for 4β5 hours. Remove chicken, shred with two forks, and return to soup.
Garnish bowls
Ladle into bowls; top with crushed tortilla chips, avocado, and lime.
