Ingredients

  • 2 cups flour & 2 cups sugar & 2 tsp cinnamon & 1 tsp nutmeg
  • 4 large eggs & 1 cup oil & 2 cups grated carrots
  • 1 can (8 oz) crushed pineapple, with juices & 1/2 cup shredded coconut & 1/2 cup chopped pecans
  • Cream cheese frosting: 8 oz cream cheese, 1/2 cup butter, 3 cups powdered sugar, 1 tsp vanilla

Directions

Mix carrot cake batter

Whisk dry ingredients. Whisk eggs and oil. Stir together; fold in grated carrots, crushed pineapple, coconut, and pecans.

Bake sheet cake

Spread into 9x13 pan. Bake at 350Β°F (175Β°C) for 35 minutes until toothpick comes out clean. Cool completely.

Frost with cream cheese icing

Beat frosting ingredients until fluffy; spread thick over cooled cake.
