Danish "Dream Cake" Is Buttery, Tender, and Truly Dreamy
Known in Denmark as DrΓΈmmekage fra Brovst: an airy vanilla sponge cake that is baked, then smothered in a warm boiled topping of butter, brown sugar, and shredded coconut, and returned to the oven until bubbling and caramelized. Difficulty: Easy.
Ingredients
- Cake: 4 eggs, 1 1/2 cups sugar, 2 cups flour, 2 tsp baking powder, 3/4 cup milk, 4 tbsp melted butter
- Dream Topping: 1 cup (2 sticks) butter, 1 1/2 cups shredded coconut, 1 1/4 cups dark brown sugar, 1/4 cup milk
Directions
Bake sponge cake
Beat eggs and sugar fluffy; fold in flour and melted butter in milk. Bake in 9x13 pan at 375Β°F for 25 minutes.
Simmer coconut caramel
In saucepan, melt butter, brown sugar, coconut, and milk for 2 minutes until glossy.
Broil coconut crust
Spread hot topping over cake. Bake at 425Β°F (220Β°C) for 5 minutes until caramelized and bubbly.
