Crisp Cucumber Bites with Herbed Greek Yogurt Spread
Cool, crisp, and wonderfully elegant without requiring turning on the stove. Greek yogurt keeps the spread light and protein-rich while chives, garlic, and lemon provide bright flavor.
Ingredients
- 2 large English seedless cucumbers, sliced into 3/4-inch rounds
- 4 oz reduced-fat cream cheese, softened
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 2 tbsp fresh chives, finely snipped
- 1 tbsp fresh dill, chopped (plus tiny sprigs for garnish)
- 1 small clove garlic, grated
- 1/2 tsp kosher salt
- Freshly ground black pepper and smoked paprika for dusting
Directions
Slice cucumbers
Slice cucumbers into uniform 3/4-inch thick rounds. Use a melon baller or small spoon to scoop a shallow well in the center of each round without puncturing the bottom.
Whip herb spread
In a medium bowl, beat softened cream cheese, Greek yogurt, lemon juice, grated garlic, chives, dill, salt, and pepper until fluffy.
Fill cucumber rounds
Transfer mixture to a piping bag fitted with a star tip (or a zip-top bag with the corner snipped) and pipe generously into each cucumber well.
Garnish and chill
Garnish each bite with a small sprig of fresh dill and a light dust of smoked paprika. Chill until ready to serve.
