Golden Zucchini and Sweet Corn Fritters with Garlic Aioli
The most delicious way to use garden zucchini. Shredded zucchini is squeezed dry, tossed with sweet corn and batter, and fried until crisp on the edges and tender in the middle.
Ingredients
- 2 medium zucchini (about 1 lb), coarsely grated
- 1 cup sweet corn kernels (fresh or frozen)
- 1/2 cup sharp cheddar cheese, shredded
- 2 green onions, thinly sliced
- 2 large eggs, lightly beaten
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp garlic powder & 1/2 tsp salt
- Olive oil for pan-frying
- Garlic Aioli: 1/2 cup mayo, 1 clove grated garlic, 1 tbsp lemon juice, pinch of salt
Directions
Drain zucchini
Toss grated zucchini with 1/2 tsp salt and let sit 10 minutes. Wrap in a clean kitchen towel and wring out firmly to remove all liquid.
Mix the batter
In a bowl, combine dried zucchini, sweet corn, cheddar, and green onions. Stir in eggs, flour, baking powder, and garlic powder until a thick batter forms.
Pan-fry fritters
Heat 2 tablespoons oil in a nonstick skillet over medium-high heat. Drop 1/4-cup scoops of batter and flatten slightly. Cook 3β4 minutes per side until golden brown.
Drain and serve
Drain fritters briefly on paper towels. Serve warm with homemade garlic aioli.
