Crunchy Smoky Paprika Roasted Chickpeas
The ultimate savory snack to replace potato chips. With high plant-based protein and fiber, these roasted chickpeas deliver a satisfying salty crunch with every handful.
Ingredients
- 2 cans (15 oz each) chickpeas/garbanzo beans, rinsed and drained
- 2 tbsp extra virgin olive oil
- 1 tsp smoked Spanish paprika
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/2 tsp onion powder
- 3/4 tsp fine sea salt
- 1/4 tsp cayenne pepper (optional)
Directions
Dry chickpeas thoroughly
Spread rinsed chickpeas between two layers of clean kitchen towels and roll gently to remove all surface moisture and loose skins.
Roast plain first
Preheat oven to 400Β°F (200Β°C). Spread chickpeas on a dry baking sheet. Roast for 20 minutes with no oil so remaining moisture evaporates.
Toss with oil and spices
Remove pan from oven. Drizzle olive oil over the warm chickpeas and sprinkle paprika, garlic powder, cumin, onion powder, and sea salt. Toss until evenly coated.
Finish baking crisp
Return to oven for 10β12 more minutes until deeply golden and crispy. Turn off oven and leave door cracked for 10 minutes to cool crisp.
