Extra-Crispy Baked Garlic Parmesan Chicken Wings
Deep-fryer crispiness without any splattering oil. An aluminum-free baking powder dry brine draws out surface moisture in the oven, creating an ultra-crisp skin that absorbs garlic butter.
Ingredients
- 3 lbs chicken wings, split into flats and drumettes, patted very dry
- 1 tbsp aluminum-free baking powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, finely grated or pressed
- 3/4 cup freshly grated Parmigiano-Reggiano
- 2 tbsp fresh parsley, chopped
- 1/4 tsp crushed red pepper flakes
Directions
Dry and season wings
Thoroughly pat wings dry with paper towels. In a large bowl, toss wings with baking powder, salt, and black pepper until lightly coated.
Bake on a wire rack
Preheat oven to 425Β°F (220Β°C). Place wings skin-side up on a wire rack set inside a foil-lined baking sheet. Bake for 40β45 minutes until blistered and crispy.
Whisk garlic butter sauce
While wings finish baking, whisk together the melted butter, grated garlic, half the parmesan, parsley, and red pepper flakes in a large metal bowl.
Toss and coat
Transfer piping-hot wings directly into the butter bowl. Toss vigorously to coat. Sprinkle remaining parmesan over the top and serve immediately.
π‘ CHEF'S PRO TIPS
- Make sure to use aluminum-free baking powder, NEVER baking soda, which will taste bitter.
- Patience is key: do not crowd the baking sheet so steam escapes and skin turns crispy.
