Ingredients

  • 3 lbs chicken wings, split into flats and drumettes, patted very dry
  • 1 tbsp aluminum-free baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, finely grated or pressed
  • 3/4 cup freshly grated Parmigiano-Reggiano
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp crushed red pepper flakes

Dry and season wings

Thoroughly pat wings dry with paper towels. In a large bowl, toss wings with baking powder, salt, and black pepper until lightly coated.

Bake on a wire rack

Preheat oven to 425Β°F (220Β°C). Place wings skin-side up on a wire rack set inside a foil-lined baking sheet. Bake for 40–45 minutes until blistered and crispy.

Whisk garlic butter sauce

While wings finish baking, whisk together the melted butter, grated garlic, half the parmesan, parsley, and red pepper flakes in a large metal bowl.

Toss and coat

Transfer piping-hot wings directly into the butter bowl. Toss vigorously to coat. Sprinkle remaining parmesan over the top and serve immediately.
