North African Shakshuka with Feta and Crusty Sourdough
The North African morning masterpiece: eggs simmered gently in a fragrant sauce of crushed tomatoes, red bell peppers, onions, garlic, cumin, and smoked paprika, topped with salty crumbled feta. Difficulty: Easy.
Ingredients
- 1 can (28 oz) whole peeled San Marzano tomatoes, crushed
- 1 large red bell pepper, sliced & 1 medium onion, diced
- 4 cloves garlic, minced & 2 tbsp olive oil
- 1 tsp ground cumin, 1 tsp smoked paprika, pinch of cayenne
- 4 large eggs & 1/2 cup crumbled Greek feta cheese & fresh cilantro
Directions
SautΓ© peppers and aromatics
Cook bell pepper and onion in olive oil 8 mins until soft. Stir in garlic and spices for 1 min.
Simmer sauce and poach eggs
Add crushed tomatoes; simmer 10 mins. Make 4 indentations; crack eggs into wells. Cover and simmer 6 mins until whites are set.
Crumble feta and serve
Top with feta and cilantro. Serve hot with crusty sourdough bread.
