Ingredients

  • 4 English muffins, split and toasted
  • 8 slices Canadian bacon or thick-cut ham
  • 8 large fresh eggs & 1 tbsp white vinegar (for poaching water)
  • Hollandaise: 3 egg yolks, 1 tbsp lemon juice, 1/2 cup hot melted butter, pinch cayenne
  • Fresh chopped chives or paprika for garnish

Whiz blender hollandaise

Blend yolks and lemon juice 20 seconds. With blender running on high, slowly stream in hot melted butter until thick and silky.

Simmer water with vinegar. Swirl water into a vortex; slide in eggs. Poach 3–4 mins until whites are set and yolks stay runny.

Layer warm toasted muffin, seared Canadian bacon, and poached egg. Ladle warm hollandaise over top.
